For me, that means keeping it classic with some onion, green pepper, ham, and cheddar cheese but I’ve provided tons of variation ideas below. Plus, you can even prep the ingredients in advance so that you can just stir it all together in the morning and microwave. A hearty, filling breakfast in under 5 minutes!
What Is Just Crack an Egg?
Just Crack an Egg is a brand of microwavable breakfast cups where all the ingredients of the omelet are already prepared. You just need to crack an egg, stir, and pop it into the microwave. This copycat recipe takes the concept and uses it to make microwavable egg scrambles with fresh ingredients.

- Cheddar cheese – I used sharp cheddar but use whatever shredded cheese you prefer.
- Bell peppers & Onion – I used green bell pepper, but use whatever color you prefer. Dice the pepper and onion into small pieces.
- Potatoes – Pre-cooked and diced small. I love cooked and cut up tater tots!
- Chicken broth – Just a little adds moisture and flavor. It might sound weird, but trust me!
- Salt and pepper – Simple seasoning for flavor.

This is a copycat version for the Denver flavor of Just Crack an Egg, but the possible combinations are practically endless. Mix and match the ingredients as desired to create the perfect breakfast! More yummy ingredient ideas:
- Other freshly shredded cheese – Mozzarella, smoked gouda, Colby Jack, Monterey Jack, or Swiss.

How to Make Just Crack an Egg

- Combine the ingredients. Place all of the ingredients in an 8 ounce microwave-safe glass jar. Mix well so everything is evenly coated in egg.
- Microwave. Microwave for 1 minute. Stir. Cook for an additional 30 to 45 seconds, until cooked through.
What Type of Jar Should I Use?
It is best to cook these in a clear jar/container. I use an 8 ounce clear glass mason jar so you can see the mixture, which helps you determine how much longer it needs to cook. If it is a light yellow color it is cooked, but if there are any darker yellow spots, that is uncooked egg and it needs to be microwaved for a few more seconds.
Can I Add Two Eggs?
Yes, you can add two eggs if you want but make sure to use a 16-ounce jar instead. You’ll also need to add an additional 30 to 60 seconds of cook time, to ensure the egg fully cooks.
How to Prepare Ahead of Time
I like to keep some of this scramble mix ingredients prepped in the fridge. You can easily chop up the ingredients you’ll need ahead of time and keep them in separate airtight containers in the fridge for up to 5 days. Then just add them to the jar with the egg, broth, and seasonings each morning and breakfast is served. Great for meal prep!

Ingredients
- 2 tablespoons small diced cooked ham
- 2 tablespoons shredded sharp cheddar cheese
- 1 tablespoon small diced onion
- 1 tablespoon small diced green bell pepper
- 2 tablespoons cooked small diced potatoes
- 1 large egg
- 1 tablespoon chicken broth
- salt and pepper , to taste
Instructions
Spray an 8-ounce clear microwave-safe jar/container with nonstick cooking spray.
Place the ham, cheese, onion, bell pepper, potatoes, egg, and chicken broth into the jar. Season with some salt and pepper, to taste. Mix very well so everything is coated in the egg.
Place in the microwave and cook for 1 minute. Carefully remove the container and stir. Place back in the microwave and cook for an additional 30-45 seconds until cooked through. (Caution, it will be very hot!)
Allow to cool slightly and enjoy.
