Duck Egg Omelette --------------- The Primal Desire (2024)

This is the first Duck Egg Omelette that I've ever made. I make omelettes all the time. This one was amazing. Wanna know how duck eggs are different than chicken eggs? Holley did a little egg review.

I'm a Daddy (But There Are No Diapers)

We're parents now. This just hit me. I'm a dad. My kid's name is The Primal Desire. This newborn requires a lot of time, energy, affection, and Paleo food. It keeps me up late, wakes me at all hours of the night, and has me up early.

Oh, I'm averaging maybe 4 hours of sleep a night, and that's so sweet of you to say that fatherhood looks good on me. Once she gets into a regular routine I hear it gets easier. Yes, lil TPD is a handful, but she's the apple of my eye.

Isn't she beautiful, lil The Primal Desire? I'm going to be sharing pictures of her with you, with the world, constantly, almost daily. Have you seen the baby? You've got to see the baby!

Holley and I are single parents sharing custody of this beautiful, beautiful baby. So far no major disputes about feeding schedules, who gets up with her when, future education…. Yes, I've been given the role of disciplinarian, and Holley gets to be the fun parent, making friends and being social (hanging out at Facebook, Pinterest, Instagram, Twitter – and I know she's gonna start hanging out at Google+, and who knows where else), but I get to wander down there once in a while too, when I'm not looking after more pressing parenting needs. Lil Primal D, she needs her play time.

And my family has been so supportive. Providing me with moral support, and answering questions, making suggestions. Gosh, I'm just really looking forward to them spending more time with The Primal Desire, having a hand in shaping her future, and enjoying what she becomes.

Parenting Information – Who Do You Trust?

I haven't read all the books or websites, but it turns out there is a lot of information out there. Seems like everyone has conflicting advice, you know? When to feed, sleeping strategies (for me), when to let her cry and when I should come running into the room, disposable or reusables, how much of her life should be put online for the world and how much I keep private between the two of us (should I tell people that she just sorta happened, that she was created quickly but out of love? Almost an accident, this amazing bastard…)? What kind of formula to use and when to start it. I mean it's great that everyone I talk to is so supportive, and I really appreciate their advice and suggestions. I really couldn't do this without them.

It's All Happening So Fast!

And she just grows up so fast! Seems like it was just last week that she was just a glint in my eye (oh, yeah, it was last week!). She was just born yesterday, but already she's so much bigger. Doubled in size. You can see she's already starting to try and get her legs under her. Gonna be running in no time. So many note-worthy milestones. 100 Facebook likes in her first day. A whack of comments. Before you know it Juli Bauer will Pin, or Tweet, or follow, or Facebook-friend The Primal Desire! Oh-my-gosh, oh-my-gosh, oh-my-gosh!

Ah, I am so glad that you could come visit us today. You come back anytime, OK? I'll be sure the place is cleaner next time. I just haven't been able to keep up with the dishes. Or laundry. And I need to vacuum. And find a place for all these new toys. Hold on a secon- Oh! Phew! What is that smell?? Need to take the garbage out!

Well, let's get together soon. I mean it. That'd be nice. I'll make dinner. OK, thanks for stopping by. Yep, I'll see you again real soon! Wave, Lil TPD, yeah, that's a good girl. Who's Daddy's lil girl? Yeah! That's you! That's you! Let's go make you something to eat! Would you like that? Would you? Yeah! Peek-a-boo! You come dance with Daddy in the kitchen while he makes you something…. Do you want a Duck Egg Omelette? You really are a chip off the ol' block!

Duck, duck, duck, (no goose). Duck eggs, meat, and fat in this baby! She's a rich one!

Ingredients

Scale

  • 1 duck egg
  • 1/2 cup spinach (shredded)
  • 1/4 cup basil (diced)
  • 1/2 cup small onions (cipollini or pearl)
  • 1 cup wild mushroom mix
  • 1/2 cup cherry tomatoes (cut in half)
  • 1 green onion (diced)
  • 3 Tbsp duck fat (or ghee, coconut oil, olive oil)
  • salt and pepper to taste

(optional)

  • 1/81/4 cup leftover duck meat (diced)
  • 1015 spears of asparagus
  • 1 cup mixed greens
  • 1 orange (wedged or sliced- however you do)

Instructions

  1. Pre-heat oven or toaster-oven to 350F for the onions and mushrooms.
  2. Melt duck fat, tossing onions and mushrooms in about half of the duck fat. Spread on a cookie sheet and cook in oven until onions are soft and mushrooms are soft with browned edges. Lightly salt.
  3. In a mixing bowl, crack theegg and beat with a fork until uniform consistency. Mix in shredded spinach and basil. Season with salt and pepper.
  4. (optional) In a frying pan cook asparagus in 1/2 of remaining duck fat on medium heat until soft, but still crunchy. Season with salt to taste.
  5. (optional) Warm duck meat in non-stick or cast iron frying pan, then put aside.
  6. Add remaining duck fat to the pan. When hot (on Med setting) pour in egg mixture. Allow to cook until almost solid, then flip to brown the other side.
  7. Serve over mixed greens. Put tomatoes, mushrooms, onions, and duck meat on half of the egg, then fold the other half over top. Sprinkle top with green onions. Plate with asparagus and orange pieces.
